As for the cheeses, the revival of farmhouse cheese-making began in County Cork more than 30 years ago and has given us the washed rind, heady flavoured soft Ardrahan; mushroomy, herby Milleens; and creamy Cashel Blue, which can knock an Italian or French blue off the board.
There's St Gall, wholesome as a buttery biscuit, whose firm, slightly bubbled curd is in my opinion equal to a good French mountain cheese, and the soft, fresh St Tola, a young cheese made from goat's milk. I also enjoy the honeyed Coolea, a Gouda-style hard type shaved onto bread or salads, and also a slither of Durrus, punchy as grape must. Many of these cheeses can be bought in perfect condition at Neals' Yard in London, or from Rippon Cheese Stores, which can send any type via home delivery (about £20 to £30kg).
But the beef and cheese is only a start: Waitrose sells Glenilen butter, made entirely by hand on a Cork farm I have witnessed the process, standing ankle deep in whey on the dairy floor. This is one of chef Richard Corrigan's favourite butters, creamy and floral on this month's asparagus. Glenilen also makes exceptional cheesecake, shortly to go on sale in Tesco.
Smoking over wood chips is a well-practised Irish craft. I recommend Anthony Creswell's organic salmon from Ummera, which is available online. Also good is smoked haddock that has been given the benefit of smoker Sally Barnes's expert curing process at the Woodcock Smokery in Skibbereen (haddock costs about £7.12 for 300g).
Lastly, the Queen might like to taste a bread made with dillisk, a salty, nut-flavoured seaweed from the Moran family at LoTide (about £2.89 for 40g), a County Mayo producer that has pioneered sea vegetables. The Morans sell carrageen moss (the weed added to the creamy pudding that lends a rich, gooey texture), Atlantic wakame, sea spaghetti and samphire, plus a mix of various sea vegetables to add to bread.
